Waggle Dance Chilli Honey Chicken Tacos
The sun is out, the music is on and I am feeling some Mexican inspired cooking today. I am a few days late though as May 5th was a couple of days ago but hey ho. When I first thought about this recipe I wanted to use a bottle of Fullers Honeydew but as there doesn’t seem to anywhere selling it around my way so I reverted to an old faithful, Wells Waggle Dance. When I was in my first years of drinking I would often drink a bottle of Waggle Dance so it will be interesting to take a trip down memory lane. Like all my recipes recently I am using my slow cooker, if you don’t have one I seriously recommend you invest in one… they are the mutts nuts! I made this recipe for four people in the hope of some left overs for the next day too, but we went in hard and only left enough for two tacos the next day!

4 Chicken breast fillets
Bottle of Waggles Dance (or another honey beer like Honeydew o BarBar)
3 Small red onions
1 Yellow pepper
1 Jalapeno pepper
100ml Honey
2 tbsp Cider vinegar
2 tsp Red chilli paste
Few squirts of tomato puree
1 tsp Garlic powder
1 tsp Onion powder
Salt and pepper
1 tsp Corn flour mixed with a drop or water
Some small soft tacos
Bag of salad
Grated cheese
Put the slow cooker on low and get it heated up ready for cooking.

Slice across the top of the chicken breasts and grind some salt and pepper over them before putting them into the slow cooker.
Chop the red onions, Jalapeno pepper and yellow pepper and throw it in the slow cooker.

In a bowl mix the honey, red chilli paste, cider vinegar, garlic powder, onion powder and some salt and pepper. Once you get a good consistency pour over the top of the chicken.
Pour the bottle of beer in the slow cooker. Add a few squirts of tomato puree on top of it all and give it a good stir.
Leave this to cook for 6-7 hours on low setting. After all this time lovingly cooking away in the slow cooker you need to remove the chicken breast and with two forks pull the chicken apart, this will be easy after an afternoon in the slow cooker. Pour the sauce into a saucepan and add the corn flour mix, stir well and bring to boil for 5 minutes or till it thickens up. Add the pulled chicken back to the slow cooker and mix in the sauce. You can either serve straight away or leave on warm till you are ready for dinner.
I had full intentions to make my own tacos, but then I saw some packs for 39p and forsaw the free afternoon to play Fifa instead of making the kitchen a right mess! Zap your tacos to the instructions on the pack, grate some cheddar and either open a bag of salad or make your own. Put it on all the table, crack open an ice-cold IPA, crank up the Tribe Called Quest and enjoy.
