Pistonhead Roast Potatoes


The humble roast potato, no roast dinner is complete without them. It can be tough to get those pesky spuds to go as crispy as you want them to, there is a fine line between roasting them till crispy and burning them. This recipe should help, the outcome was lovely, slightly crispy, fluffy roast potatoes. I have used Brutal Brewing Pistonhead Kustom Lager but you could use any pale ale, lager or even amber ale for this recipe.


Pistonhead Roast Potatoes Maris Piper Potatoes (however many you want depending on how many are eating) 4 garlic cloves chopped Red chilli chopped 40g butter Third of a can of Pistonhead Kustom Lager or any other pale ale, lager or amber ale 2 rashers of streaky bacon Sprinkle of rosemary Salt & pepper Tin foil


Peel and cut your potatoes into whichever size you want for your roast potatoes. Cut the bacon into small pieces (you only need 2 rashers but I had 3 and it is criminal to leave 1 on its own so my bacon to potatoes ratio was a little off!), chop the chilli and garlic. Put the oven on about 200.


In a pan melt the butter and pour about a third of the can of Pistonhead Kustom Lager into the pan, bring to a simmer while gently mixing with a wooden spoon, then add the chilli, garlic, sprinkle of rosemary and bacon. On a low to medium heat cook for a few minutes till the bacon starts to cook.

In a baking tray mix the potatoes with all the bacon, chilli, garlic and half the melted beer butter (you want to keep half for later). Make sure the potatoes are well coated then wrap tin foil around the baking tray so the potatoes are covered, we are going to steam cook those beauties. Cook in an oven for half hour.


After half hour take the potatoes out of the over and remove all the tin foil, give the potatoes a good toss then add the rest of the beer butter (you may need to quickly put this on the heat). Coat well again and put back into the oven for 20-25 minutes till the potatoes are looking crispy.


Once the roast potatoes are looking crispy they are ready to be part of your Sunday roast.
